Ingredients:
2 packages (1/4 ounce each) active dry yeast
1/2 cup Sugar, divided
2 cups warm water (110° to 115°), divided
3 tablespoons vegetable oil
1 egg
1 teaspoon salt
4-1/2 to 5 cups all-purpose flour
DIRECTIONS:

In a large bowl, dissolve yeast and 1 tablespoon sugar in 1 cup warm water. Add the oil, egg, salt, 2 cups flour, and remaining sugar and water. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 40 minutes. Punch the dough down. Turn onto a floured surface; divide into 24 pieces. Shape each piece into a 6-in. rope. Place 2 in. apart on greased baking sheets. Cover and let rise until doubled, about 25 minutes. Bake at 350° for 10 minutes or until slightly brown. Yield: 3 dozen breadsticks.

Ingredients:
1 cup butter
1 cup sugar
3 eggs
1 1/2 cups flour
1/4 tsp. salt
3/4 tsp. baking soda
3/4 tsp. vanilla
3 medium bananas, ripe and smashed
5 tbsp. sour cream
2 cups of a chocolate cake mix, straight out of the box

1 1/2 cups chocolate chunks or chips

DIRECTIONS:

Preheat oven to 350 degrees. Grease a 9×13 in pan. Cream butter and sugar together. Add eggs and mix well. Combine flour, baking soda, and salt together and add to creamed mixture. Add vanilla, bananas, sour cream, cake mix, and chunks/chips. Mix very well. Pour into greased baking pan. Bake for 45-50 minutes or until ready.

1 (17.5 oz) sugar cookie mix
DIRECTIONS:
Preheat oven to 350 degrees. Grease a 9×13 in pan (and a muffin pan). Cream butter and sugar together. Add eggs and mix well. Combine flour, baking soda, and salt together and add to creamed mixture. Add vanilla, bananas, sour cream, and cookie mix. Mix very well. Pour into greased baking pan and muffin tin. Bake for 45 minutes or until ready.

Banana-Nut Bread

1 cup mashed very ripe banana (about 3 small)

1/2 cup sugar
1/2 cup plain nonfat yogurt (we usually use low fat sour cream)
1/4 cup margarine, melted (we usually use butter)
1 egg
1 egg white (we usually just add two eggs)
2 cups all-purpose flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/4 cup chopped pecans, toasted (we usually add walnuts and/or Craisins, then sprinkle the tops with sugar in the raw)

Combine first 7 ingredients in a large bowl; beat at medium speed of an electric mixer until well blended. Combine flour and next 3 ingredients; Add flour mixture to banana mixture, add nuts, stirring just until moistened. Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan coated with baking spray with flour. Bake at 350º for 1 hour and 5 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan, and cool completely on a wire rack. Bake mini loaves for 35 minutes or muffins for 18 minutes.

Quick and Easy Cinnamon Bun Bread

Quick and Easy Cinnamon Bun Bread
1 1/2 cups all purpose flour
1/3 cup sugar
1/4 tsp salt
1 pkg. rapid rise yeast
2/3 cup warm milk (100-110F; low fat is fine)
3 tbsp vegetable oil
1/2 tsp vanilla extract
1 large egg
1/3 c. raisins

Filling/Topping
2 tbsp butter
2/3 cup brown sugar
3/4 tsp ground cinnamon
pinch ground cardamom

Icing
1 cup powdered sugar
1-2 tbsp milk or cream

Lightly grease an 8×8-inch square baking pan.

In a large bowl, combine flour, sugar and salt. Dissolve the yeast in a measuring cup filled with the warmed milk, then stir milk mixture, vegetable oil, vanilla extract and egg into the flour mixture. Mix well, until very smooth. Stir in raisins. Pour into prepared pan and let rest for 15 minutes.

While the dough rests, mix together butter, brown sugar, cinnamon and cardamom in a food processor until the mixture is crumbly. Sprinkle evenly on top of rested dough and press the mixture down into the dough with your fingertips (or swirl in with a spatula.)

Place pan into a cold oven, then set the oven temperature to 350F.

Bake for about 30 minutes, until bread is lightly browned at the edges and the center of the bread springs back when lightly pressed. Some of the sugar mixture on top may still be bubbling.

Cool for at least 30 minutes before whisking the powdered sugar and milk together to form an icing and drizzling it onto the bread.

Serve warm. Leftovers can be reheated in the microwave.

“Moist Streusel Bread”
3 cups flour
1 cup sugar
3 teaspoon baking powder
1 teaspoon salt
1 3/4 cup milk
2 eggs
1 cup melted butter (or 1 cup of oil)
1 cup diced mangoes
Streusel Topping:
1/3 cup sugar
1/4 cup flour
2 tablespoons butter or margarine
DIRECTIONS:
Preheat oven to 400F. Grease & flour loaf pans. In large bowl, sift flour, sugar, baking powder, and salt. Stir in milk, eggs, and butter. Mix until flour is just incorporated. Do not overbeat. Gently stir in mangoes. Pour half the batter into each pan.
For topping, combine sugar and flour. Cut in butter until mixture resembles course crumbs; sprinkle half over each loaf. Bake for 40 minutes.
