Black Bean Burgers and Swiss

1 can Black beans 15.5 oz, drained and rinsed, set aside 1/4 cup of them
3/4 cup rice flour (or wheat flour, if you prefer)
4 slice Swiss Cheese
1/2 cup diced red onion
1/2 cup green pepper
1/2 cup Barbecue Sauce (I like Jack Daniels)
1 egg
2 cloves garlic, minced
2 tablespoons flax meal (can omit if you don’t have on hand)
2 tablespoons parsley
2 teaspoons chili powder
1 teaspoon Worcestershire
1 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon cayenne pepper
1-2 teaspoons oil for frying

In a large bowl smash up the black beans (leave the 1/4 cup out) with a potato masher or use a food processor if you prefer. Add the rest of the ingredients except oil and swiss cheese including the 1/4 cup of set aside beans. Mix until all the ingredients are distributed evenly throughout the beans. Heat oil in large skillet on medium heat. Form four patties with the mix, it will be sticky. Fry on medium heat five minutes per side. Top with swiss cheese slices and BBQ onions.

BBQ Onions

2 large yellow onions, sliced thinly
1-2 tablespoons olive oil
2 tablespoons BBQ Sauce
Dash of salt and pepper

Cook onions, salt and pepper in olive oil on low-medium heat for 15 minutes. Add BBQ sauce and heat through. Top burgers.
