Mango & Apple Crisp

Filling:
4 cups chopped apples*
3 cups chopped mango*
3 tablespoons lime juice
2 tablespoons honey
1 and ½ teaspoons cinnamon
¼ teaspoon nutmeg

For topping:
½ cup rolled oats
½ cup packed brown sugar
¼ cup all-purpose flour
½ teaspoon cinnamon
¼ cup butter
¼ cup chopped nuts and/or coconut

In a large bowl toss apples and mangos with the lime juice, honey, cinnamon and nutmeg.

Pour into a 8×8 inch baking dish.

To make the crumb topping: in a medium bowl combine the oats, brown sugar, flour and cinnamon. Cut in butter until coarse crumbs form. Stir in the nuts or coconut. Sprinkle over fruit.

Bake in a 375 degree preheated oven for 30-35 until topping is golden. Refrigerate leftovers (if there are any!).

*I used mangoes that weren’t real soft, if their overly ripe they will get real mushy. Because the mangoes are softer than the apples cut the mangoes just a tiny bit bigger. This will help prevent mushiness.
